May Mendoza is a longtime Corpus Christi business and civic leader whose career has been defined by entrepreneurship, service, and regional leadership. She has chaired the United Corpus Christi Chamber of Commerce, represented the Coastal Bend at the Texas Capitol, and held leadership roles with the Texas Restaurant Association. Named a 2022 TAMACC Woman of Distinction, Mendoza has supported workforce scholarships, education initiatives, and economic-development efforts throughout the region. A Director Emeritus of Goodwill Industries of South Texas, she also rebuilt her business after Hurricane Hanna devastated Bob Hall Pier, reflecting the resilience and determination that have shaped her career.

Water

​During Corpus Christi’s 2026 water shortage, May Mendoza began preparing her restaurant to conserve—posting notices, shifting toward bottled water and disposable serviceware, and reducing washing before emergency restrictions took effect. That firsthand experience complements her earlier Chamber leadership, when the organization advocated for a reliable, affordable and diversified long-term water supply.

Streets

Mendoza’s Chamber leadership included advocacy for stronger transportation infrastructure, mobility, and public safety. She has also publicly called for proactive street-safety improvements on Padre Island, including measures to better protect cyclists and motorists, connecting infrastructure investment with Corpus Christi's broader economic health and quality of life.

Public Safety

May Mendoza has consistently made public safety a priority, identifying it as one of her top issues during her 2024 City Council campaign. Her commitment to supporting those who protect Corpus Christi was reinforced when she was endorsed by the Corpus Christi Police Officers Association representing local first responders.
